Students at the Sept. 13 LSU football game will have the opportunity to gorge themselves on something other than nachos, hot dogs and popcorn when University biology junior Monica Bravo and renowned chef Robert Vasquez set up their tent outside the PMAC to serve exclusively Paleo meals.
Bravo said Paleo diets consist of meat, vegetables, fruits and other non-packaged, non-processed foods.
Bravo began eating Paleo food when she was a teenager after her father was diagnosed with heart disease.
“I started eating completely Paleo once I got to school, and about a year ago, I started blogging about it,” Bravo said.
Bravo’s blog, bravoforpaleo.com, currently draws in more than 120,000 views per month.
A few weeks ago, one of Bravo’s posts on Paleo chicken salad wraps went viral on Pinterest, and she had the idea to sell them on campus.
After getting approval from the concessions supervisors at the University, Bravo established a joint venture with Vasquez, owner of Vive Cafe in Mandeville.
Their concession stand, ¡Bravo for Vive!, opened at the Sept. 6 football game. Among the items served were barbecue pork wraps, kale chips and the chicken salad wrap that started it all.
Bravo said Vasquez has catered for the president and Michael Jordan and spent seven years at Whole Foods developing the company’s to-go recipes.
“The real thing that I want to bring to everyone here is this idea of the farm-to-table movement,” Bravo said. “All of our food is locally sourced organic. All of our meat is antibiotic hormone-free.”
Bravo said the high quality of the food affects the cost of the meals served, with the wraps selling for $10 a piece.
“The nachos are $10. Our kale chips are $7 and they’re about as big as nachos,” Bravo said. “It’s the top notch product. If we’re going to do it, were going to do it right.”
Bravo said she eventually hopes to expand her Paleo concessions to other university campuses.
“I see it going big. My dream is really to be in all stadiums,” Bravo said. “I want to be in Southeastern Conference schools. I want to bring an option so people don’t have to eat fried food for game day.”
