This delightful yet hefty side item is not to be taken lightly. Two Potato Al Gratin, while traditionally a side, can be featured as the main attraction in any meal if you so choose. The recipe features a “scalloped” style baked potato with a sweet and savory taste brought out by golden as well as sweet potatoes in the mix. Recipe:
Ingredients: 3 large Yukon golden potatoes; 2 large sweet potatoes; 1/4 cup chives; 3 medium sized shallots; 3 cloves garlic; 2 tablespoons chopped parsley; 2 cups heavy cream; 2 cups milk; kosher salt; ground black pepper; nutmeg; 1/4 cup butter; 2 cups Gruyère cheese; 1/2 cup Parmesan cheese
Preparation: First, make sure you slice the potatoes into circular slices as thin as possible. In a large microwave safe bowl, pour the milk over the potato slices in the bowl and cover.
Cook for 10 minutes, stirring after the first 5 minutes (the potatoes should be rather soft after). Preheat the oven to 375 degrees. Saute the shallots and garlic in a small amount of butter until they are soft and beginning to brown.
Add the heavy cream, the parsley and the rest of the base spices. Stir until a semi-thick cream develops and then place the cream over the lowest heat possible to maintain warmth. Grease a 9 x 13 baking dish with butter (until the entire dish is coated).
Then, layer approximately 1/3 of the potato slices on the bottom the dish, spread a thin layer of the cream sauce and sprinkle the grated Gruyère on top. Repeat this process three times until there are three solid levels. Top the dish with the Parmesan cheese.
Divide the rest of the butter into thin slices and dollop them across the top of the Parmesan, and cover with aluminum foil. Bake for about 30 minutes, uncover the dish and bake for an additional 20 minutes until the top is browned. Enjoy.
