Fish tacos have become a staple for California living, but it is often difficult to find a restaurant that makes an honest attempt. So why not make your own? It’s pretty simple to make a delicious fish taco, and the best part is…it’s extremely simple and requires few ingredients. I hope you enjoy my version of a West Coast classic.
Recipe:
Ingredients: 2 large Tilapia fillets; 1 bunch of fresh cilantro; two lemons; salt, ground black pepper, garlic powder; olive oil; fresh flour tortillas
Preparation: On a large sheet of aluminum foil, gently pour a thin line of olive oil. Throw a dash of salt and garlic powder on top of the oil, then place the filet on top and move it in a circular motion so that the entire bottom is well coated in oil. Then, give the top of the filet a generous coating of olive oil and sprinkle more garlic powder again then pepper. Squeeze half of lemon on top. Fold the foil so that none of the liquid will spill out. Grill the fish for approximately 5 to 6 minutes on each side or until the fish is light brown. Finely chop the cilantro and sprinkle over the fish taco, then squeeze a little lemon juice on top. Top with your favorite kind of salsa (I went with a fresh mango salsa). Enjoy.
