I have an obsession with not wasting food. I think it started when I was a kid and my family would tell me to finish my plate. That didn’t change now that I’m living on my own, especially since I’m buying my own food.
Every time I get to the end of the line on the groceries that I bought the week before, I start to get creative. Sometimes it works and other times it makes me re-evaluate doing this.
This time, it’s an odd mix, but it worked.
This is a vegan version, but the spirit of cleaning out your fridge is that you can use whatever you like. So meat lovers, do as you please.
This is very simple, all you’re going to need is:
1 cup of pasta (I use shells, but you can get creative with it)
2 tablespoons of garlic aioli
3 tablespoons of salsa
1 avocado
½ teaspoon onion powder
Pinch of salt and pepper to taste
Instructions:
1. Boil the pasta until desired texture, drain and put into a large bowl.
2. Mix the garlic aioli, salsa and spices into the pasta.
3. Slice the avocado (and anything else you venture to add) and place on top of mixture.
4. Serve right away or place in the fridge for two hours to serve chilled.
There you have it! This is my go-to meal for the night when I can’t seem to conjure up anything else of major substance.
