The growing popularity of food trucks has now come to LSU’s campus.
Two food trucks, Roly Poly and Fete Au Fete, have been serving students since the start of the fall semester.
Roly Poly employee, Dakolby Moore, said the idea of a food truck started when LSU began looking for vendors to have on campus. “We just had to make it happen. We have a restaurant over in Northgate, right off Nicholson, and we just felt like everybody needs to try Roly Poly. So, we had to put that thing on some wheels,” said Moore.
Jessica Mancuso, an LSU student, enjoys the food trucks on campus because they are convenient and healthy. “You’re getting good food. It’s not subway or fast food. It’s literally fast good food,” said Mancuso.
Moore said the food truck scene grows more and more each week.
The Louisiana Department of Health requires food truck owners to carry a proof of business license and a sellers permit. But there’s more than goes into starting a food truck then just the paperwork.“The process of getting a food truck is long. First of all, you’ve got to find a good food truck, you’ve got to find running water, you’ve got to have a generator, you’ve got to have people who can drive it, and you’ve got to get insurance, insurance for a food truck is high, pretty darn high,” said Moore.
Every move Roly Poly made was one step closer to opening their food truck on campus. “We were not gonna let nothing stop us. We felt like we had to get Roly Poly on wheels. You know what I’m saying, so that everybody can get that roly, roly, roly with a dab of ranch,” says Moore.
The Roly Poly and Fete Au Fete food trucks can be found parked at the northeast corner of Patrick F. Taylor Hall.
