Situated in Mid City off Government Street, Twine Modern Meat Market secures a special spot for those looking for delicious meals from around the world.
Before Chef Steven Diehl opened Twine two weeks ago, the Idaho native worked as a private chef the last few years, creating a successful mail order delivery business.
Building upon his success, Diehl decided it was time to open up a store front.
With a modern ambiance, the market’s walls exposed wood and ceiling beams create a warm environment as a medley of funky music plays in the background, while customers inspect the food on display. For those who prefer to dine in, there is also seating available at the market.
Diehl purchases the majority of his meats and vegetables from surrounding Louisiana cities.
“I try to buy as much local as possible,” he said.
Lisa Lamulle, a friend and employee of Diehl, said Twine offers “healthy, alternative choices.”
Although Twine specializes in a variety of meats and delectable side dishes, vegetarians and others with dietary restrictions need not worry.
In addition to specialty meats, Diehl said there is “something for everybody,” including poultry, fish, pasta, sandwiches and “grab and go” options. For those who want a light meal, Diehl recommends the Ahi Tuna Salad, a customer favorite prepared with fresh tuna and served with an optional spicy soy sauce.
Diehl’s passion for food and culture is apparent in the Twine’s cuisine. The diversity of spices and herbs used in conjunction with high-quality meats and vegetables creates a multi-layered meal.
Uninterested in limiting himself to a particular type of cuisine, Diehl, who has worked in many restaurants, has collected skills and experience from his travels across the world. The knowledge he gathered has helped to create a restaurant that caters to bringing dishes from all around the world to Baton Rouge.
“I’m very global — I don’t focus on one cuisine,” Diehl said.
Peruse the selection of goodies for purchase throughout the market. With items like specialty candies, teas and spices, Diehl’s broad cultural horizon is evident as he shares these treasures with his customers.
Catering to those in a rush or finishing up a long day of work, Twine’s prices are affordable for college students. Students can take a break from fast food and grab a healthy, fresh meal for only twenty dollars.
“Come in, pick up a steak and side and go home and cook it,” Diehl said.
