Quesadillas are one of the most versatile food options because there are a variety of ways to dress them up or down. A simple cheddar cheese quesadilla can be a simple and delicious treat, but this recipe explores one way to create a great dinner treat featuring chicken, black beans and corn. I hope you enjoy my Chipotle Chicken Quesadillas.
Recipe:
Ingredients: 1 pound boneless chicken breast; 1 can black beans; 1 small bowl of fresh steamed corn; shredded cheddar cheese; 3 tablespoons chipotle powder; 1/2 cup enchilada sauce; salt, pepper; olive oil; fresh tortillas
Preparation: Slice the chicken into small cubes while still raw. In a large pan, grill the chicken on medium heat in a small amount of olive oil until browned. Add enchilada sauce, chipotle powder, salt and pepper and stir. Cover for 2 minutes. Add the steamed corn and black beans and stir well. Cover the pan and simmer the mix for approximately ten minutes until the beans are soft. On a large baking sheet, put two tortillas down and spread a thin layer of cheese on each. Spoon the chicken mixture on one tortilla and broil in the oven on high until the cheese is melted thoroughly. Place the other tortilla on top and press the two firmly together. Let cool for two minutes, cut and enjoy.
