Meatless sandwiches are a healthy alternative to the often greasy options restaurants offer. Additionally, flavor is not compromised in a vegetarian style panini, and can leave you feeling healthy and satisfied. This panini is a play off a Caprese salad with tomatoes and fresh mozzarella cheese. This recipe works bell with a panini or sandwich press but has room for experimentation.
Recipe:
Ingredients: Sourdough bread; Roma tomatoes; fresh pesto; fresh mozzarella cheese; butter
Preparation: Making this is rather simple. All you need to be wary of is making sure the cheese is thoroughly melted throughout. So, butter each side of the outside of the bread. Place the buttered side on the press and spread the pesto on one piece. Then layer the tomatoes and cheese so that they kind of intertwine (it works best if the tomato and cheese are sliced as thin as possible). Add the second piece and press the sandwich together. Grill until the bread is golden brown and the cheese is thoroughly melted. Enjoy.
