The arrival of Spring means two things in Louisiana: crawfish and Lent. So, on Fridays during this time of year, Dylan Roussel and his family are busy on their eight crawfish ponds in Lutcher, La.
Every day the crawfish traps are checked and reset for the next morning. Once the crawfish have been retrieved, they are inspected to remove any dead ones and are brought back to Miko’s, the Roussel family seafood shop.
On a Fridays during Lent at Miko’s, over 1000 pounds of crawfish can be sold as opposed to around 300 pounds on a normal Friday. The large amount of people observing Lent who cannot eat meat increase the crawfish sales. Some of the busiest days for the Roussels during this time of year are Good Friday and Easter Sunday.
Crawfish season typically lasts three to four months. Once it has come to an end, the Roussel family works with other types of seafood.
