This alternative salad option is not only delicious but extremely versatile as well. Similar to a Caesar salad, a green bean salad can accommodate a variety of protein toppings. For instance, a great piece of salmon or chicken would accompany this plate perfectly, though this recipe is in its base form. For vegetarians, this is a filling option that is not void in flavor and more than just traditional green beans.
Recipe:
Ingredients: 1 pound of fresh green beans; 1 orange; 1 lemon; 1/2 cup diced purple; 1 tablespoon of fresh diced garlic; 3 tablespoons butter
Preparation: Melt butter in a large sauce pan on medium heat. Add diced purple onions and garlic until they both start to soften and become clear. Add the fresh green beans and stir the mixture until the green beans a well coated in butter (make sure the ends are clipped off of the fresh beans). Cook for about five minutes, stirring occasionally, and then squeeze one half of a lemon onto the beans. Cook for an additional three minutes and squeeze an entire orange onto the beans. Cover the pan and cook until the beans a soften yet still slightly crisp. Drain the mixture of the butter and enjoy.
